The retort food system is a complete food preservation method aiming at supplying food of high quality in an economical way. This system involves cooking of food products followed by packaging of cooked food in flexible containers (also known as retort pouches) and sterilized at high temperature.

The primary objective of sterilizing the packed food is to extend the shelf life and make the food safe for consumption by destroying harmful microorganisms. The high temperature treatment (thermal treatment) is done to deactivate most, if not all, organisms that remain active in cooked food. These organisms, if not treated, contribute to spoilage of packed food.
